I couldn’t wait any longer for pumpkin flavors! I love the warm spice mix of cinnamon, cloves, allspice and nutmeg that usually accompany pumpkin cakes. So comforting and indulgent they make me want to cosy up under a blanket with a hot cup of tea. Enough said, I seriously recommend these. Feel free to skip the apples if you prefer them plain.
Muffin Batter Ingredients:
- 2 1/2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tablespoon pumpkin spice (I blended cinnamon, allspice, cloves and nutmeg)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups pumpkin puree
- 2 large eggs
- 1/4 cup vegetable oil
- 2 cups apples, peeled, cored and finely chopped
Streusel Topping Ingredients:
- 1/2 cup granulated sugar
- 4 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 4 tablespoons butter
- 1/4 cup chopped walnuts
Method:
Preheat oven to 350 F. For muffins combine flour, sugar, pumpkin pie spice, baking soda and salt in large bowl. Combine pumpkin, eggs and oil in medium bowl; mix well. Stir into flour mixture just until moistened. Stir in apples. Spoon batter into prepared muffin cups, filling three-fourths full.
For streusel topping combine sugar, flour and cinnamon in medium bowl, pinching with fingertips. Sprinkle over muffin batter.
Bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool on a rack before eating. Enjoy!
OH MY CHEF!!!!!!—THEY LOOK SINFUL. My kind of muffin!!!
